Plant-Based Scones & Cookies
Instructor: Chef Katie Andrews
This class is designed to enable you to create both a lovely scones for any occasion and make pretty cookies for any event. Katie will show you the path to becoming an intuitive baker using scent, sight, touch, sound and taste to create simple and amazing desserts that will have your friends and family raving, all while avoiding common allergens and being conscious about your environmental impact.
Students should be prepared to measure, mix, bake, slice/scoop their creations (then take those creations home and devour them with family and friends). An adventurous palette isn’t required, but is encouraged, as we will be making flavor profiles based on our wants and needs.
Students should walk away from this class with a basic understanding of measuring and mixing techniques, checking for doneness using the senses, cutting fats in doughs, and using the creaming method for cookies from start to finish properly and how to transport their desserts safely, as well as consistency in portioning scones, cookies, and time. Students will also learn the basics of flavor paring.
Students will make an (1) dozen scones and also one dozen cookies (or six cookie “Sammies” for those who would like them).
